Gazpacho and Fino

Lately, I’ve been thinking a lot about food that pairs with dry sherries. The Bloody Sherry post inspired me to the perfect food pairing combination: Gazpacho and Fino!

Gazpacho

Gazpacho is a cold tomato soup, very popular in Spain during the summer. Although a cold soup may sound a bit strange, this is definitely a recipe you must try if you never have. It is light and refreshing, and it pairs perfectly with a very chilled glass of Fino Sherry!

Here is a great recipe from Epicurious.com that uses Sherry as part of the ingredients. Try it!

* 2 pounds large tomatoes, halved
* 1/2 pound bread, crust removed, cut into 1/2-inch pieces (about 4 cups)
* 1 red bell pepper, seeded, diced
* 1 cup chopped cucumber
* 1 cup chopped red onion
* 1/4 cup Sherry
* 1/4 cup extra-virgin olive oil
* 1 garlic clove, minced
* 1/2 teaspoon ground cumin
* 1/2 teaspoon paprika
* 1 cup water

Gently squeeze tomatoes to release the seeds and juices, then strain juices. Chop tomatoes and transfer them to large glass bowl along with the tomato juice. Add next 9 ingredients. Let stand at room temperature 1 hour.

Working in batches, puree gazpacho with 1 cup water in blender until smooth. Pour gazpacho into coarse strainer set over bowl. Press on solids to extract as much soup as possible. Season with salt and pepper. Chill at least 2 hours and up to 1 day. Serve cold.
